  • 60 g Ricotta
  • 200 g Canned tomatoes
  • 8 g Basil

  1. 1Cube eggplant, salt and let stand 15 minutes, rinse.
  2. 2Fry eggplant in oil 8 minutes.
  3. 3Cook penne per instructions.
  4. 4Mix eggplant with ricotta, roasted tomatoes and seasoning.
