🛒 Ingredients

  • 2 kg Pork butt
  • 6 chunks Hickory wood
  • 3 tbsp Molasses
  • 2 tbsp Worcestershire sauce
  • 2 tbsp Apple cider vinegar
  • 4 tbsp Dry rub (salt, pepper, paprika)

👨‍🍳 Instructions

  1. 1Apply dry rub. Refrigerate overnight.
  2. 2Smoke at 110°C with hickory 10 hours. Spritz with apple cider vinegar hourly.
  3. 3Mix molasses, Worcestershire and vinegar for glaze.
  4. 4Apply glaze last 2 hours of smoke. Rest 1 hour before serving.
