German-style pork knuckle slow-smoked until the meat falls off the bone.

🛒 Ingredients

  • 1.2 kg Pork knuckle
  • 1 tsp Caraway seeds
  • 4 cloves Garlic
  • 1 pc Onion
  • 250 ml Beer (dark)
  • 2 tbsp Salt

👨‍🍳 Instructions

  1. 1Score the skin deeply. Rub with salt, garlic and caraway seeds.
  2. 2Place in a roasting pan with onion and beer. Roast at 160°C for 2 hours.
  3. 3Increase to 220°C for 30 min to crisp the skin.
  4. 4Smoke over beech wood chips the last 45 min for extra flavour.
