🛒 Ingredients

  • 3 ribs (2.5kg) Beef plate short ribs (bone-in)
  • 3 tbsp Coarse salt
  • 3 tbsp Coarse black pepper
  • 1 tsp Garlic powder
  • 6 pieces Oak wood chunks

👨‍🍳 Instructions

  1. 1Trim any hard fat. Apply salt, pepper and garlic powder dry rub.
  2. 2Smoke at 110°C over oak wood for 10–12 hours.
  3. 3Wrap in butcher paper at 75°C internal. Cook until 96°C.
  4. 4Rest 1 hour. Serve as whole ribs — the bones slide right out.
