🛒 Ingredients

  • 2 kg Brisket flat
  • 4 tbsp Coarse black pepper
  • 2 tbsp Coriander seeds (ground)
  • 1 tsp Curing salt (pink salt)
  • 2 tbsp Sea salt
  • 1 tbsp Garlic powder
  • 4 handfuls Cherry wood chips

👨‍🍳 Instructions

  1. 1Combine salts and garlic powder. Dry-cure brisket in fridge 5 days, flipping daily.
  2. 2Rinse off cure. Apply 50/50 pepper and coriander crust.
  3. 3Cold-smoke at 85°C with cherry wood for 3 hours.
  4. 4Steam or oven-braise at 160°C for 3 more hours until tender.
