🛒 Ingredients

  • 800 g Beef tenderloin centre-cut
  • 150 ml Red wine
  • 3 pcs Shallots
  • 100 ml Beef stock
  • 30 g Butter
  • 2 sprigs Thyme

👨‍🍳 Instructions

  1. 1Season tenderloin. Sear all sides in hot pan 2 min each.
  2. 2Finish in 200°C oven for 15 min (internal temp 54°C for medium-rare).
  3. 3Make sauce: sauté shallots, add wine, reduce by half, add stock. Finish with butter.
  4. 4Rest 8 min. Slice thick and serve with sauce.
