  • 3 tbsp Salt
  • 2 tbsp Pepper
  • 1 tbsp Paprika
  • 1 tbsp Garlic powder
  • 6 chunks Oak+cherry wood

👨‍🍳 Instructions

  1. 1Trim if needed. Apply dry rub liberally.
  2. 2Smoke at 110°C for 10–12 hours to internal 92°C.
  3. 3Wrap in foil at stall. Continue until probe-tender.
  4. 4Rest 1 hour. Slice thick against the grain.
